2 cups diced (1/4 inch) peeled hothouse cucumber
2 cups diced (1/4 inch) red bell pepper
2 cups diced (1/4 inch) ripe tomato
1/2 cup diced (1/4 inch) red onion
2 cups tomato juice
1/2 cup red wine vinegar
1/3 cup extra-virgin olive oil
2 dashes Tabasco sauce
Salt and pepper, to taste
1 ripe avocado, peeled, pitted and cut into 1/4-inch dice, tossed with 1 tablespoon lemon juice, for garnish
1. Place all of the vegetables in a large bowl.
2. Add the tomato juice, vinegar, oil, and Tabasco. Season with salt and pepper.
3. Coarsely purée half of the mixture in a blender or food processor, pulsing the machine on and off. Return the puréed mixture to the bowl and stir to combine. Refrigerate for up to 6 hours before serving. Serve in brightly colored mugs or bowls garnished with diced avocado.
