1 pound dried black beans
2 tablespoons extra-virgin olive oil
1 large onion, cut into 1/2-inch dice
4 large cloves garlic, peeled and crushed
2 vegetable bouillon cubes
2 bay leaves
1 small dried red chile pepper
2 tablespoons ground cumin
1 tablespoon dried oregano
1 bunch cilantro, with roots if possible
4 tablespoons chopped flat-leaf parsley
Salt and freshly ground black pepper, to taste
1 red bell pepper, stemmed, seeded, and cut into 1/4-inch dice
2 teaspoons brown sugar
2 tablespoons dry sherry, plus 1/2 cup for serving
2 teaspoons fresh lime juice
1/4 cup chopped fresh cilantro leaves
Cooked white rice, for serving (optional)
1 cup sour cream, for garnish (optional)
Thin slices of lime, for garnish
1. Pick over the beans, discarding any stones. Soak them overnight, covered by 2 inches of water. Drain the beans and rinse several times in cold water. Set aside.
2. Heat the oil in a large heavy pot over medium heat; add the onions and cook until softened, about 10 minutes. Add the garlic and cook, stirring occasionally, for 5 minutes.
3. Add the reserved beans, the bouillon cubes, bay leaves, dried chile, cumin, and oregano. Cover with 3 quarts of water. Gently bruise the stems and roots of 4 large sprigs of cilantro. Tie them together with kitchen string. Chop the remaining leaves and reserve. Add the stems to the pot along with 2 tablespoons of the chopped parsley.
4. Bring the soup to a boil, reduce the heat, and simmer, uncovered, for 1 1/2 hours. Skim off any foam that rises to the surface.
5. Discard the cilantro stems. Purée 2 cups of the soup, along with garlic cloves, in a food processor. Stir the purée back into the soup. Season with salt and pepper.
6. Add the bell pepper, sugar, sherry, lime juice, the remaining 2 tablespoons of parsley, and the chopped cilantro leaves, and simmer for 30 minutes. Serve in bowls as a soup, or over white rice, garnished with a dollop of sour cream and a slice of lime, or just a drizzle of sherry and a lime slice.
